This is just me spitballing ideas here, but has anyone ever tried to make some kind of investment bank or financial institution that can take orders based on market data? For example, maybe allow investors to buy and short stocks in material and module markets, based on the lowest sell price of that item. I understand the lack of a stock market involving actual stocks and shares in a corporation, but why not have a commodities market?

There is the BSAC Commodities Exchange which functioned somewhat like a limited stock market. How active it currently is isn't something to which I can speak. In the end any such exchange is going to run into the same problem as every other bank or investment vehicle which is that trust is required. It is very, very unlikely (without a change in game mechanics) to get such a thing off the ground. It is as doomed to failure as whatever the current bank of the month is.
