What happens if you interrupt research on a blueprint? Does the blueprint 'remember' where it is up to in the research or do you have to start the rank again?

You mean if you put the BPO in for +4 ME and once that job has completed for another +4?
Or do you mean putting the BPO in for +5 ME and cancelling the job part way through.

Cancelling a job throws away all progress.

Thanks. Yes, I meant cancelling. Thought it might have been like skill training.

When cancelling a job you lose all ISK and any materials and get back the BPO as it was at the start of the research.
If you cancel a job that uses a BPC (invention/manufacturing), you get it back with the runs expended and you lose all materials

Don't cancel jobs unless unavoidable

It's not something I've retested recently, but I believe you can still 'pause' a job by offlining the array/lab, where the jobs will restart when it's put back online.

However - don't unanchor it.....
