found a great recipe for fajitas there, and i'm about to go grocery shopping. i'm pretty sure the fajitas will be good.

you're welcome scip. that's right, you mentioned that empty fridge situation, I'm not sure i've ever figured that one out. it usually ends up being classic broke food but just for the simplicity of ramen, spaghetti and sauce. lol good luck, may the culinary force be with you and stuff

Oh man, fajitas. Steak ones or chicken ones, no best pick on that, it's a hard choice. A fajita cooking thing, learned over time: Grocery store beef or chicken will not brown. Water comes out and makes in stew and turn gray. The way around it is to get your skillet damn hot first with a little sizzling oil, then throw your marinated strips of tastiness in. Sear them up one side, then the other. Don't mix them up and accidentally turn it into a stir-fry. Roast/toast them up just Tex-Mex right. If you want to avoid the oil, you can get a slotted skillet that drains the water off.

Or find an ethnic grocery that has hunks of meat that might be dubious, but probably aren't injected with supermarket water weight. (Pools of water do not naturally flow from butchered mammal muscles. Please believe me-- I spent my high school days working live cattle in central Texas). If you want to go the market foraging route, you can find some good stuff. That's where you exercise your eye of the eagle and your fine sense of discernment. Also, your sense of smell. Smile

But-- Before you started cooking up that good marinated meat, you have to get all of your sour cream, guac, salsa, lettuce and tomatoes cut and laid out how you like them. And, you're heating up and laThings are about to come out perfectly cooked and hot and ready to eat. Now is not the time for chopping lettuce and tomatoes.

While you're cooking up that fajita meat, be warming up your flour tortillas on medium heat. When the upside is showing some good bubbles and inflation, flip it over and let it do another puff up. Keep feeding them on, and putting them on a plate, covered by another one, to keep them warm and moist.

Hoo-wee, that's some good eating! If you're going to go to all that trouble, might as well invite a friend over to help out and grub wich you.

Fajitas are best when you pan fry your meat, if grilling isn't something you can manage for a quick meal. Pre-marinate like you would for a BBQ. Keep a tiny bit of pink for best results. After the meat is done you can dry-warm your tortillas in the same pan.

The veggies are better grilled but you can work them lightly on a separate pan.


Fixins should be prepurchased if it's just you, or made from scratch for a group of people.

Now I like Fajitas, but Burritos will always be my fav, and not with that ground beef stuff either. Shredded beef is the way to go.

Well some some of those those certainly aren't cheap here in the north were only apples grow (barely I might add and the damn pear died on cold a few winters ago) but I'll give those a try.

Griddle your meats if you can't flame grill.
If you have nice meat and you are a fan of meat don't bother with the marinade, just tenderize and salt and pepper them, never kill the taste of nice meat especially Steak.

I fry my Fajitas Veg in a wok at high temperature and have my own super secret guac, salsa and sour cream recipes all made from fresh ingredients (-1 secret non fresh ingredient in the salsa). Question
