My corpmates are talking about getting together with their Tengu's and Proteus into low sec for doing L5 missions. The only Strategic Cruiser I have access to is a Loki (training up minmatar line) and the Loki just does bad DPS. There will likely be about 5 or 6 of us doing these missions. They don't want to bring battleships because we might lose them to PVP players.

I don't really know what to bring. The Loki doesn't seem like a good ship for this job. Should I just bring a hurricane? What about a command ship or a heavy assault cruiser? What would you suggest?

It's L5's in low sec, and we are based out of high sec, so we'll be jumping in, doing the mission(s) and then jumping back up to our home.

If you are stuck as mostly minmatar the Hugnin/Rapier could work in a support role for webs and TPs (You could also go with a support Loki, with some artillery). Neither of the minmatar HACs will be ideal. If you have a set of logi then a Hurricane could work, but it may be to squishy otherwise (Depends on which lvl5s you are doing).

T3's will get instapopped in a level 5.

2-3 Spider domies will run the gated missions just fine. 3 cap transfers, 2 large remote armor reps, 1 drone link aug, 1 local rep, mids full of tracking computers + MJD. 2 is risky but doable, 3 is pretty safe. Cap chaining archons and thanys can run the nongated missions. Additionally, a capless dual-asb Vargur or Golem can solo all level 5s.
