I've always hoped for stations with a viewing deck where you can look out and just watch the ships as they dock and flyby.
Maybe an option to wander around your item hangar to make sure the fedo's are fed and check the corpses aren't spoiling. (and a display case for a chosen corpse you've collected in CQ).

Even a casino in NPC stations (this could be a nice isk sink if the NPC station took a rake on the games too).
Maybe one day we'll be able to play cards in Jita 4-4 while watching the undock traffic jams outside....probably never happen though sadly.
