The Taranis has 1,070,000 kg mass, 3.25 x inertia modifier

The Ares has 990,000 kg mass, 3.35 x inertia modifier

Which aligns to warp the fastest? (before fittings)

Get EFT or PYFA, it will answer your question and a whole lot more.

Also, remember the server works on ticks. So their align time is essentially the same. (5secs/ticks with the stats you posted) but you can't even fly the ship without training Evasive Maneuvering to 5 and spaceship command to 3 so assuming you can actually fly the ship it is 4 seconds/ticks.

If you multiply the mass with inertia mod you will get that the ares has the lowest "effective" mass thus should have the shortest align.

Pyfa confirms it with 3.1s vs 3.25s. But in practice they both align in 4s as the server works in ticks of 1 second.
