Mainly it dates to the start of space games where everyone wants pirates to exist but then uses modern trade vessels that are purely optimised for cargo efficiency as their template for design. Also at all the TV shows where they want helpless traders so the hero can rescue them, or be pursued while in a trader with no/very few guns.
Rather than looking at the true pirates of the Caribbean era where the 'cargo' ships were heavily armed and armoured galleons capable of giving as good as they got. Often with more cannon & armour than the ships attacking them.

As a result you end up with the classic sci fi meta game where the trader is simply prey for the 'true PvP'er' rather than a realistic environment where the trade ships actually have the armour, shields & guns to realistically survive in the dangerous world where pirates are common.

You can instawarp your capsule out the second your ship explodes. There is no chance to catch it if you need a lock to kill it in this case.

You can catch the pod if you have some sensor boosters or some remote sensor boosters. I know becuase i have did it before.

Generally speaking, pods and shuttles are nigh impossible to catch in highsec and lowsec short of a pilot being inattentive and sitting in a vulnerable state, warping to a station and landing outside of a docking ring, or latency making them temporarily vulnerable to fast-locking ships.

What you want to do is move to nullsec where we have interdictor bubbles. Get a buddy with an interdictor and a cloaking device, he can sit nearby and stop your ganker getting away. The downside is you now have to kill him yourself as you no longer have Concord as a crutch...
