I'm just getting into trading, and I want to hear your opinions about what item is the best to buy/sell. The only requirement is that the price >20 mill. What item is most easily sold?

You need to learn your own items, if everyone started trading the 'best' item it would no longer be worth trading.

eve-central and eve-marketdata have item volumes. You can pull them either manually or with api.

EVE is (mainly) a PvP-orientated game. And although it might not be obvious at first glance, this includes the market, too. Very few players will share their "weapons/fittings" (=profitable items/trading routes/strategies) with their "enemies" (=other traders).

Besides - it all depends on your trading style (station trading, cross-region trading, lazy region wide station trader etc.), for example an item inadequate for station trading in Jita 4-4 might be worth hauling to "the frontlines" (=FW hubs, mission runner hubs).

I would look at item volumes which can quickly be obtained from you market window, as in amounts sold per day, generally I look at the crappiest day on the record (hope for the best prepare for the worst) and price differences between the sold and bought items, by market volumes i also mean the general ISK value of the item traded per day and as I just station trade these days I also use Elinor, but its a useful tool for any trader that has stuff on the market, to quickly measure potential profit and quickly update orders.
