You'll more than likely aid the gankers, quite a few of them, are more than likely to have alts and they won't be all ganking characters.

Some of the manufacturing characters are not set up to do missions they're for manufacturing.

Doubt you'll achieve anything except maybe higher prices and those still manufacturing will love you for that.

Look at it this way if they can gank you without worrying about profit, then you really will have no effect on them other than maybe deprive them of a laugh or two.

Really wouldn't surprise me if the gankers have mining alts, and are doing the ganking to drive prices up on the market and also to drive away competition.
