I made a spreadsheet for me to use that makes it really easy for me to see my profits. Simple and easy to use, all you have to do is just add a new table row. You can filter and all that. It's unprotected so it can serve as a great base for your own spreadsheets. I included some region data incase you want to pull something from eve-central so you have the TypeId right there for you.

I never touched Excel until I worked on this spreadsheet, so if something doesn't work for you then lol that sucks for you, I spent enough pain on it already. Word of warning, the conditional formatting in the table might give you some trouble (It did for me! :().

All you have to do is enter in your Transaction tax % and brokerage fee % then just create a new table row and put in the item name, how much you plan on - or have - to spend on the item, and how much you want to sell it for. I recommend playing around with the sale price to see a profit percentage that you want as the lowest you'll go for.

Almost every total has a "Name", which can be used in a formula across a workbook. Below I've listed them all.
_Region - All the region names in Data - Regions
Brokerage - Value entered for Broker Fees
ItemTable - Self-explanatory
Jumps - Value entered for Jumps
ProfitPerHour - Self-explanatory
ProfitPerMonth - Self-explanatory
ProfitPerWeek - Self-explanatory
PurchaseRegion - Value entered for Purchase Region
ROI - Return on Investment, this number you want as high as can be (It can be above 100%, 100% means you doubled your profit), Formula: =(TotalRevenue-TotalCost)/TotalCost
SaleRegion - Value entered for Sale Region
TotalBrokerageCost - Tells you how much ISK you'll need in order to put up all the items you have in ItemTable
TotalCost - All fees and purchases combined
TotalProfit - After everything is taken into account (ie TotalCost), this is how much you'll make
TotalProfitPercent - can't be over 100%, but the closer to 100 the better!
TotalProfitPerJump - TotalProfit/Jumps, more of an FYI than anything - I like to have it.
TotalPurchaseCost - Total it costs you to buy the items in the ItemTable
TotalRevenue - Asset value of sales, or how much you are selling your items for
TotalTaxes - All broker fees & transaction taxes combined so you know how much the bloody SCC is taking from you
Transaction - The % that the SCC takes from you whenever you put up something for sale - This can hurt your profits if its a high value item, so make sure you can get it as low as you can

Ideas on how you can expand on this:
- Date rows and show totals for only specific dates/month/year
- Calculating data for only sold items
- Grabbing regional prices from a market API like Eve-Central
- Changing ugly formatting
