Is there a way of changing the Custom Office tax wallet division?

Or a way of getting a running total without having to add up all the transactions?

Trying to look for a way of monitoring income from the custom offices.

IIRC, they work like POS labs (i.e. everything dumps into division 1) ... then again, I'm not running any PCOs ...

Try a Market tool such as EVE Mentat. I think this would be easier to use and monitor.
