Short answer:-

Anything from the Scorpion line.

Long answer:-

Do a minis game similar to FFGs "X-Wing" and "Attack Wing" games. More like AW I guess as otherwise scale will be an issue, and ultimately you want all the ships from Eve to be able to make an appearance, whether frigs or caps. Punters could buy the ships just to have the models or play a board game if they want.

Please just license some HeroClix like the Star Wars and Star Trek ones. You can make all the ships and they would be pretty cheap.
