As for moving stuff, fly manually, tank the hauler and fit a mwd + cloak. That will prevent you from being a target for 99% of the common people that gank stuff for fun or profit, even if you have enough stuff to make you a target(because there are so many people that don't do that, and it takes effort to catch you). The 1% that still remains is bad luck on your side(lag/client freeze after jump) or running into a well prepared guy(instalock setup with RSB support) or bad luck with another ship within 2500m when you spawn on grid. Getting over 15k EHP helps a lot, since it prevents you from instapoping against a tornado, giving you a chance to get back to the gate, warp out or at least get transversal up.

Edit: As for ISK efficiency, a Tornado costs 80M, 2 destroyers about 16M. I always assume 50% drops so if you fly with 200M in the cargo, it would give the Tornado guy 20M and the people in destroyers around 42M each. If you add tag costs or the effort to grind back that sec, hardly a good target. The value where a professional ganker gets interested is probably more in the 300-400M region, at least for a hull with a sufficient tank and prop/cloak, what requires some effort from his side.
