Are we allowed to take audio files straight from the jukebox and feature them in youtube videos?

As long as the videos are about EVE (and probably you have ads disabled), I guess that might be acceptable.
Better ask somebody from CCP directly, not via the forums. Email or petition, I suppose.

Generally yes. Don't monetize it without permission from CCP and if the content ID match comes up just acknowledge it and move on. Music in your videos rarely lead to severe problems with the content owner. They'll let you keep the video as long as they get the rights to make money from it instead of you. It's copying video content, that is the fast track to ban city. Naturally if you get a permission to use it and monetize it there won't be issues. Just show Youtube the permission when you get the copyright notice.
