Is there a recommended path I should take after I complete the SoE missions? Or is this where I should open up and make the game what I want it to be?

After completing the SOE arc its usually customary to shoot a few of your corpmates in celebration. (jk)

But really thats it. You are on your own. Chat with your corp and see if you can help them achieve their goals.

from that point you make the game yours, play it how you want to.

if you did all the career paths during your tutorial, you should have a basic idea of which areas you might want to explore further (if you didn't, it wont hurt to go back and finish them off)
do some research into them, --> Google "Eve Online [your text here]"
check which areas your considering have skillset overlaps
come back at that point if you have more questions

whilst your doing all that train for the Core Competency Standard Certificate
it will tide you over until your ready to use evehq or evemon & eft or pyfa

That is the part the game lets you go. Best of luck in EvE and don't be afraid to explore. If you are afraid to explore, you may miss opportunities.
