There are a number of tools that all use the same public data we offer over CREST. The simulator linked above is one made by ccp available to everyone. http://null-sec.com/atxi/#/replay/104/0 is a player made wel client using the same information that offers a less shiny but more tactical view.

The specific IOS tool I was using on stream is not available to the public at this time, it's still in a fairly rough beta.

I don't know, I'm pretty sure it got patched at least 3 times during the morning segment while we were at the desk, so somewhere in there it may have made it to beta. P

Fun Fact : It actually got patched 25 times over the tournament, and did not even exist until the Thursday / Friday just before the first weekend. Final patch was the Sunday morning of the Finals. Shortly after that I passed out backstage at the studio on the floor.

We´ll have a post mortem on the app this week, and it will be developed further for future tournaments once that debrief is over.

As for any other availability, there are no concrete plans atm.

How is this stuff even possible, could I record my own fights on TQ in this way to analyze them later? Would this use data loaded via the API or would I hit a local "record this" button in my client and then the tool would use the recorded data to make this kind of interactive replay?

In this case CCP created the necessary data server-side and made it available over the CREST API. However they already said that this approach was only possible cause tournament matches are such a limited environment. So it'll probably be a while till we get this for the rest of TQ and it might work entirely different then.
