I'm confused of what's being changed between patches. Where do we find patch notes for each patch so we know what to test out?

You will only get patch notes for official releases. While in test everything is subject to change at very short notice, it simply isn't worth the effort to keep re-writing patch notes for every change until everything is tested and ready to go into TQ.

CCP will let you know the important things that are being changed so that you can try and break it, but it is also worth just doing some of the day to day things because some changes will have an impact on things you wouldn't expect.

I do not agree with you.

It always worth to know what are the things changed during 2 versions, to test each one except if it's for example, an optimisation

We can't miss the Undock new button, but we can miss other things, or even some correction of things we already tested, as for example some unfinished relic/data sites.
