SkeIn Thargensen is right. You should ask around in the CAS corp chat. CAS isn't your typical NPC corp. Not only is the corp chat highly active, we also do things beyond the normal scope of what NPC corps were intended to do. We have different channels where people get organized for missioning, mining, exploration, incursions, and yes PVP.

zaphammer and Sabathius2, just finished running a T1 frigate tourney this past weekend which was advertised a lot on the CAS corp channel. zap also ran a low-sec frigate roam a couple of weeks ago. At the end of February, there was a big null-sec roam led by Ashina Sito, and Boiglio often runs a pvp/null roam basics class. CAS also has a Null-Sec base of operations, where we have small gang roams almost daily, and we have some amazing FCs and veterans in Syndicate that will help get you started with cheap frigate and cruiser set-ups, as well as teach you the basics of pvp combat.

Just ask around CAS chat, someone will point you in the right direction.

I found my first PVP corp and got my entry into PVP like this:
I put a list together of things I wanted, the times I could play, what wanted to learn and the sort of people I wanted to play with, the sort of wars I wanted to be in. I then went to the corp/alliance recruitment thread and put together a list of likely candidates which matched them. I spoke to a short list and picked the one I liked the most then asked them nicely to let me join.

Its not the way to get into PVP but it worked for me. Just never be put of by people saying you need X or Y to PVP, a 1 day old account can immediately get into PVP should they want too and theres plenty of good corps willing to take these guys on. My only real add to that is if the corp is in an alliance and they claim to be Sov holders, just do a bit of research into that alliance; you don't want to end up in a renter if you can avoid it.

TL;DR EVE PvP is rocket science.
