Pick a sub set of items. Track the price of those items both in your local hub and the primary hubs; jita, amarr, rens, dodixie. Find a local hub/items were you can sell for a profit locally and at least break even at a Primary Hub if you need to dump volume. I advise a spreadsheet with imported data to help you track this as you will never not need this information.
