TIE Fighter. With that unrealistic-looking twiddly control thing. You know, the dial/spinner knob.
(Also Mad Max's car, but that's not a sci-fi ship).

I'd want to fly the ship from Descent 2.

A Corellian Engineering Corporation YT-1300 Light Freighter would do me nicely, as long as it had been heavily modified enough to do the Kessel Run in less than twelve parsecs!

I've always liked the X-Wing, but I don't know if I'd really enjoy flying it. I'd probably design my own.

Fast, maneuverable, small but comfortable interior accommodations, sleek and stylish.. actually that ship from Chronicles of Riddick was cool. If I recall, it could even hover, plus it had the ability to put it's pilot into a sort of hypersleep on long flights.

The Tardis - both spaceship and time machine

Barring that, the "Heart of Gold" (from The Hitchhiker's Guide to the Galaxy).

If that doesn't grok either, the Death Star. Technically a station, but since it can move, it's a spaceship too. But I'd seal all those silly access tunnels and put up fine meshes on every venting port and other such nonsense.

What, still not good ? Then just give me the USS Voyager.

The Frictionless Space Ship found in the Space Park of Miliways by Zaphod and co in HHGttG.

Failing that, something really comfortable like a Galaxy class from Star Trek.
