How are they found? I see lots of empty market slots for some ships and I'm curious as to how to produce blueprints, I know you can create copies but how do you acquire new ones?

You have posted in the wrong forum. Perhaps new citizens Q&A, or ingame tutorial, or the help channel ingame.

Blueprints also known as bpo can be found in NPC stations, ingame. Google around abit, but pretty much every ingame item, has an accompanying blueprint.
Post in one of the above mentioned channels to find out more.

Look at the "NPC Sellers" at the bottom of every BPO page here:
