Question, any Corps/Individual exist in EVE that one can pay to make a ship for them(say.. I want to buy a Falcon, a buy a blueprint, contract someone for 100mill or so to supply the Mats(if it even worth that much?) and they'll build it for me because they have the skill etc...and so on and so forth?)

Sure do.

But for most ships buying from the market in a place like Jita will get you a ship faster, and for probably a similar amount (most ship margins are pretty thin).

What do you think the Market is?

You are paying someone to build something for you. Sell the blueprint to recoup that cost and you have the same thing. (You didn't think they wouldn't charge you for their time, did you?)
