SLI graphics worth it?

I'm currently specking up a new gaming PC and was speaking to some guys in corp about SLI graphics cards and they advised me that for the purposes of multiboxing eve online in windowed/fixed mode, the SLI didn't make any difference. That all the grunt work would go through 1 card and the other would be redundant unless the game was in fullscreen then it would share the workload between them and I would be better off getting a single better card with 2GB+ vram.

Is this the case with linux? I'd also like to know if it's worth putting extra coin into getting an i7 hex core or should I get an i5 and put the left overs into the GFX?
