Because why should someone fly a ship only capable of doing 1 thing when other people people can do the same thing in a ship that also has other uses? Drone minerals made mining ships redundant. Personally, I think mining ships should be removed from the game and asteroids should be shot with guns to blow them up. Minerals would come from looting the asteroid wrecks. That would also allow for drone minerals to go back into the game. That way miners could do it in a PvP ship and we can remove high sec except for starter systems. Newbies could have a 30 day period where they can't be attacked so they can learn the game.

It's a social activity that is extremely newbie-friendly, and one that depending on the scale, can give a corp different directions they can go towards. Example, they could just sell the mins outright and make it a straight profit thing, OR they could use the mins to build stuff to either sell or use, which of course involves that many more people.

The mechanics of mining are godawful boring, sure, but that part can be changed. The overall appeal of mining as a profession though, that can't be dismissed.
