I currently have a POS setup and running but I want to change tower races. Can I just offline the current POS? and put another one up? Or do I have to stop and unanchor everything and resetup the entire thing? Thank in advance!

You must offline everything, unanchor everything including the tower and then put up the new tower.

In the past this would be a major pain, but with recent changes it's quite fast to anchor and online modules.

Before you un-anchor your pos if its in high sec make sure your corp has sufficient standings in order to anchor the new pos.
