i am a carebear looking to move to pvp and have recently learned that gallente ships (which all my skills are in) are not very popular in nullsec and fleet ops. so i am trying to pick a new race to focus on. i think either amarr or mimatar. which would have more fleet op appropriate ships?

Speaking as a fellow Gallente Brosef, we have some nice options.

First up is the obivious and easy cross train into Amarr. Generally all your current skills will be valid for the ships support wise, all you need to do is get the Energy Turrets and Amarr ship skills. It opens up some interesting ships. The downside though is it is very much more of the same and you will be mainly limited to armour fleets (you can do shield fleets but generally you'll be an easy primary in something like a harbinger)

Second option and my current one (woo RP) is Caldari. You'll have to invest a week or two into getting decent shield skills, but once you have got those, it opens up some very interesting hybrid boats. The Harpy, Moa, Ferox, Naga, Rokh all make excellent blaster boats, and with the range bonus you can get some damn nice range out of Null. Having the shield option also allows you to switch between fleets easily and your not as limited in scope. Futher down the line you could also train missiles and get in on some of that imba pve missile action.

The nice thing about the second option is you can then train into minmatar super easy, and be able to fly any of their ships as you'll have the gunnery/drone/missile/armour and shield supports. With the first you will have to do a fair bit of training to get the most out of Minmatar.

Finally just to whore out a little more, here is my Eveboard. As a Gallente/Caldari cross you can kind of see what skills you end up having: http://eveboard.com/pilot/Drew_Solaert as you can see, it leaves you pretty much free to cross into any ship easy as pie.

Final point. Faction Ships.
First option gives you 0
First option into Minmatar gives you Blood, Serp, Angel
Second option gives you the Guritas line.
Second into Minmatar gives you Angel Serp Guritas

Might be a factor worth considering.

I lied :o

Don't let you lack of skills hold you back, if you can fly the Ares or Taranis, you can fly in the big fleets. While you're doing that, the above poster had some solid advice.

Generally:
Nullsec BS fleets are usually Amarr (Baddons) or Minmatar (Maelstroms)
Shield BCs are always used (Mostly Hurricanes and Drakes)
Armor HACs (read: Zealots)
Support ships (Recons including gallente, not so much Amarr, Logistics tend to favor Scimitars or Guardians)
Tier 3 BCs (Naga seeing more use, Tornado popular, not sure about Oracle/Talos)

That said, Gallente are great a small gang stuff, so you can probably get by flying ceptors in the big fights and melting faces with a Brutix on roams until you fit whatever concept you're shooting for.

Again, this is assuming you go 0.0, there are lots of other PvP opportunities, but you haven't flown tackle until you're buzzing around at 3km/s between opposing balls of battleships 100+ strong each
(I was there)
