Is there a way for me to see ammo levels for each anchored gun, without having to go out to each gun and check its cargo hold?

You will need to take control of each gun to see the ammo levels - you'll need "starbase defense management" at lvl 1 at least to control a gun - otherwise there is no way other than visiting each gun.
