I'm trying to figure out what, if any, major differences there are between the Eve Production Manager and IPH Industry Calculator.
I'm still reading up on production, and trying to decide what tools I'll need to efficiently get things started, and be profitable.

Any help that could be offered on sorting through this would be greatly appreciated.

The EPM announcement thread
Crius release thread
EPM User Guide

While there is a bit of overlap between the two programs -- IPH as a broad-based industry calculator, EPM with focused production calculations -- EPM is better seen as a replacement for those who don't want to use a spreadsheet or roll their own application to manage their production business. Because it uses API data directly, costs and reporting are accurate, and inventory management is simple. Also, the Market Research Report is highly effective in finding the profitable items.

Also worth looking at is Eve Manufacture Tool which I quite like.

Why not both? Find out what each tool is useful for and if it is of a benefit to you.
