In the interest of not having to pay for my sub out of pocket (and instead, with ISK) I'm putting together a Nyx sitter plan, to train on accounts with mains whose skills I'm content with. I've talked with Nyx pilots, browsed battleclinic fittings, and looked through the yet-unlocked threads in this forum, and this is what I've put together on my own.

This is the extent of my knowledge of what a Nyx sitter should look like. Please look this over and let me know if there is a module or scenario I have not accounted for. I appreciate your advice very much.

A true sitter toon literally only needs to be able to get into the ship and log off.

To my way of thinking, you're going too far for making a sitter toon and not far enough for making an actual Nyx pilot.

A less skill intensive type of toon that sells well (higher than average isk per skill-point due to higher demand) are tengu pilots. Skill books are also cheaper.

Also, I wouldn't advise using the dual training thing for this, which is what it sounded like you were planning to do. Normally training characters for resale pays on average round-about 600k isk per hour. If you're plexing that then on a monthly basis you've accumulated a bit more than 400mil isk worth of skill points and spent over 500mil on the PLEX.

edit: Think that last thing through too. If you accumulate 400mil in passive isk per month by paying for a toon and you also have to pay a plex to transfer it, then on the long run you'd be better off just paying cash for plex. Trading characters makes sense if you have one that you don't really need or want but as a way to make isk, it's not a high-quality investment in time or money.
