So im flying my interceptor carrying nothing but some ammo. I get attacked by another pilot in a frig.

Why would he board me and spend minutes facing off against me when he can just kill me in a few seconds.
How would my wreck suddenly spawn ******* blueprints? or other high tier loot that im not even carrying?

who said you'd spawn loot you don't have? doesn't some get destroyed when you're ganked? and I'm talking more about boarding wrecks and doing some sort of CQ instance aboard it rather than using a salvage beam

if you want active boarding actions, go look at my thread of reworking SOV into a PI-interaction microgame and extrapolate that onto sending troops on shuttles and pods against troops you keep frozen in your cargo hold

Sure, no station defense then.

How about the idea of boosting service modules with CQ room interactions with interesting click-bait eye candy?

Walking tin Refineries-boost yield or reprocessing.
Factory's-
Research Hubs-
Market Hubs-
Clone vats Complexes-

Other than that, lets just weld the pods closed again. I see no meaningful mechanics to dress up barbie in space.

It's not safe out here. It's wondrous, with treasures to satiate desires both subtle and gross. But it's not for the timid.
