Um, well since you have mining and industry skills, you could mine or do some industry.

If you have skills for a Drake, you could do lvl3's/4's....

Do null/WH exploration.

Go blow up MTUs.

Fly tech 1 frigates into null sec.

Join FW (or pirate the warzone).

Run missions.

Suicide gank for teh lulz.

War dec someone and hit them.

Use EFT/PYFA to theory craft ridiculous fits and try them out.

Or pick one of these: http://swiftandbitter.com/eve/wtd/

Welcome back to Eve.

I suggest keeping the Industry and Mining skills you already have, more than likely you may need them again in the future. Now about the combat ship skills for the Drake, finish training those up.

As for game content, if you haven't done so in the past, you might wanna consider quickly running the Career Agent missions to reacquaint yourself with game controls. After that I suggest running some low level missions and mix it up with some low level exploration combat sites, both Cosmic Anomalies and Cosmic Signatures. As your skills and experience increases, you can move up to better ships and fittings to run the higher level missions and exploration sites.

Good luck to you, may you have a long and rewarding career this time around.

Mining tends to be boring and monotonous
Industry tends to be monotonous
Drake is just about the most boring, monotonous and sleep inducing ship in the game

As long as you keep choosing monotonous and safe play styles or ships the game is probably going to be boring. If you already quit earlier and now find that your chosen play style and ship bores you then the only solution is to start doing things well outside your comfort zone, things that require effort, planning and practise. Having to actually think and learn is what keeps you busy and you might just find an activity that isn't boring. It might not be safe but it won't be boring.

Then put in the effort to learn how not to die :)

If PvP is not your pair of shoes, you can use SoE line ships or covert ops, you may start with frigates, and get acustomed to the art of survival. Mechanism of cloak use, Dscan, local, align, avoiding gatecamps. Stuff like that. There is a lot of you tube videos about that. There is ISK to be made too.

You will make mistakes sometimes, you should calculate it in.

You can sacrifice some ISK to make game feel more compelling and fun. Meanwhile you can make more than you lose.
