Friend of mine thinks you can grind standing of your main, set up a high sec POS, give the already anchored and running POS to an alt (even if they dont have the standings) and it will be all good.

IE grind standing with a corp, set up high sec pos... invite alt to corp give alt ceo and leave corp

Does that work?
And if so, how does it work if you have a set up high sec POS and (say you set up a 1 man corp to get the POS up) invite people an the corp's faction standings drop under what you need to set up the POS? Does it offline or unanchor or what?

It will stay. You only need the standings to set it up, not to maintain it.

I believe there are businesses in eve that do this, setting up high sec pos for those who otherwise can't

Yes, as long as the tower itself is set up your standings no longer matter, so the char that set it all up can leave the corp to the alt and you wont have any trouble. It is quite common to hire people to get the requiered standing.

The person with the standings has to be in the corp alone for a week to let their standings carry over to the corp, then the POS can be anchored.
