Iv been subbed to this game for a while but am unsure of a lot!

If I join a corp, and they have an office in a station where a lot of my own stuff is stored there. Will they be able to take my things (through corp hangers)? If so how can i stop it?

As long as your stuff is in your own item hangar than it's perfectly safe. If you put it in the corp hangar than it's accessible to the corp.

iirc the CEO and directors may be able to see the stuff in your personal hangar, but i'll defer to someone with more experience.

I should buy an Ishtar.

They can see the items in your hangar if they are in the same station. I'm not sure about interacting with it.

Anyone with director roles can look into the hangar and see any ships and crap you leave lying around on the floor, station containers are totally private thought.

And no they cannot interact with anything they can see, only stuff in the corporate hangar and their own.

3 people can SEE what you have stored in your personal hangar (SEE, only that. They are NEVER able to take anything from personal hangars).

1. CEO
2. Director
3. People with the security officer role

The first 2 can do it because CEO and Directors have ALL possible roles which thus include the Security Officer role

As others have said they cant take anything out of your personal hangars but they can add to it unless this feature was for some reason removed.

And it only works if your corp has an actual office in the station as well. If it has no office no-one can see into your hangers. However, renting an office is easy-peasy in hisec or lowsec. If you want to obscure what assets you own, put them in a high-rent office. That being said, there's little sense to snoop into someones hangers unless there's a good reason for it. Like an accusation of corp theft or a planned awox.

^This.

Plus those people can drop items into your hangers too, but they cannot remove, not even items they just dropped in.

I once did this to a player I didn't like. Only I did it with about 2mil rounds of ammo, in single item stacks.

My first thought was Paladin-->King Arthur (although Charlemagne would've been more correct), but given that he's a tourist, I decided it must be Arthur Dent from The Hitchhiker's Guide to the Galaxy
