All stations should have guns on them to protect their departing ships from gankers.

They do, in hisec, where it matters. I think lowsec do as well, but I havent tried to play station games in a long time, so I could be wrong

This is as nice as I get. Best quote ever https://forums.eveonline.com/default.aspx?g=posts&m=4137165#post4137165

War targets aren't protected by NPCs, Lord Chanlin.

Player owned outposts do not have guns, and neither, I THINK, do npc null stations. Everywhere else has station guns that will imediatly light you up to the tune of like 600 dps as soon as you shoot someone who isnt a legit target. (Suspect, WT, -10 sec, etc.)

Yeah, some do. They float outside the docking ring.
Anyway what's it matter regarding undocking? You are invulnerable and can just push dock/re-dock. Just that moment it takes you to align you are vulnerable, but maybe more your fault for not paying attention while you were still in inv mode.

I'm in it for the money

ummh ... you do not have safe undocks ?

EVE Wiki ....
Quote:

This type of bookmark includes those that are position to allow you to warp instantly away to safety from station when you undock. These can be used to allow a pilot to assess the situation outside a station before engaging with any enemies that might be outside.

To create an 'Under Fire' Safe Spot, follow these steps:

Un-dock from your station, but take care to not change the direction that you automatically travel in.
Carefully change the speed of your ship so you travel away to a safe distance, say 200km away.
Now take a bookmark.

In this way, the moment you undock you can warp to a spot straight ahead of you 200km from any enemies lurking outside the station - and from there to any other point you wish while being out of range of snipers and tacklers.

I have shot at stations many times. Regardless of security. They do indeed shoot back.

Almost sounds like an exploit. Or an awful lot of trouble just to undock safely.

EDIT: To be honest, no I didnt know about them. Thanks for educating me.

To be clear, Nullsec conquerable stations (seeded stations, not outpost) have guns that do absolutely nothing. They are there as part of the station entity and are inactive.

As far as those go, yes that should be changed to where they actually play a role and matter.

You fly out 200-300km from the undock (can be done afk) and make a bookmark that lasts forever. You press more buttons when logging in...

That's why Eve is great. You have a lot of options, if you don't want to go through the trouble of creating an insta undock, then don't. The result being the possible destruction of your ship, you just have to see which one suits you best. Make a bookmark and laugh at campers, or save yourself 5 minutes and end up losing your ship.
