Why is the mood so different on the forums than in the game?

You can always go quiet, I do that in meetings and it serves the purpose well.

It is not just Eve forums, have you ever read comments on a news forum..they are mostly hostile and insulting. The internet in general has depersonalized communication and given rise to a new breed of cowards who can talk big while cowering in a corner. Compared to most, Eve is pretty civil, aside from a few topics.
