In the past before all the regulations, tons of farmers here in the USA to built and flew their own airplanes but I do suppose they were from kits and not completely fabricated on the farm.

They still do.
Kit-built aircraft line the apron at Aldino Airport, for instance (across the street from where my brother lives). Building an autogyro isn't actually all that hard, and a real farmer would have all the necessary skills to assemble a basic autogyro; most of the skills are fabrication and mechanic skills and real farmers have those in spades.
