Are there any limits on the number and/or variety of skills my character learns? I understand that I may only train a certain amount at a time in the queue, but is there any limit on the total number of skill points my character may obtain over time?

Nope. You can accumulate as many skillpoints as you want, in any profession you want, anytime you want, with no fear of any of them "locking you out" from any other skills or professions.

Yup, the only limit is the total number of skills avaliable in game, which at this point is ~300 i think.
Other then that you can train anything and everything you want to without any drawbacks.

398 skills to be precise (399 if you include skills that were available many years ago during character creation).

The skills will take forever to train though, I once did an Evemon training plan that had every skill in the game (at the time) trained to 5 and it said i would finish sometime around 2020. So even training them all is not even a cap because it is unlikely you will ever get there.

I once podded myself by blowing a huge fart.

We ran EVEMON up to all skills to 5 the other day and it almost crashed EVEMON and told us, with +5 implants we were looking at around 27-28 years.
