What graphics card and driver are you using?
Also, I would strongly recommend you to upgrade to a newer wine version.

You are using the outdated stable build of wine (1.4.1). You should check out this thread to find instructions on how to install the latest wine in Ubuntu.

Ok, two things I would try:

1. Try a new wineprefix. I you are using a very recent version of wine you don't need to bother with overrides or such things. Simply create a new prefix by running winecfg. The only setting that has to be altered is disabling DirectX11 support for wine version higher than 1.5.26/27. Disable the d3d11 under Libaries in winecfg and then symlink your original EVE install (drive_c/Program Files/CCP/EVE) to the new prefix and you are done.
I assume you are familiar with how to do this.

2. If you are using a clean wine prefix already or this does not help, try installing the official Nvidia drivers. You will need linux-headers(your kernel) and build-essential for the setup to work. If you've never done this before I recommend to read some guides before you start with the process. But I don't know your linux experience, so maybe that's a piece of cake for you.
