I've searched google, eve online but still can't figure out how to actually purvey the holoreels. I also have some Concord dog tags. Right now these seem like useless trinkets, will they become useful? Thanks! Lol

Holoreels are a trade good, Dogtags I believe are used for faction.

There ARE useless trinkets in the game.

Some "trade goods" are only traded by the NPCs, and NPC trading was nerfed a long time ago because people were making a lot of money with predictable trade opportunities because the NPC scripts weren't all that complex. You could always find robotics sold cheaply by NPCs in the Inaro area, and always find strong NPC demand for robotics, for a huge profit. They nerfed that, and more recently they also switched a lot of the "trade goods" to be made through Planetary Industry (PI) and consumed as POS fuels or in T2 production, which means that players now control the prices.

Still, some of the goods have been left as useless trinkets, and there are a lot more in the Contracts system; flavor items or left-overs from various missions or Exploration encounters.
