Asking which ship for lvl 1 and 2 missions, go for the corax, it will eat NPC pirates up, to fly this you will need skills;
Destroyers
Rockets
missile launchers
ballistic controls skill (forgot the skill book)
Shields
shield manipulation
Missile rig skill
Energy upgrades skill
If you can afford too buy meta 3 or 4 mods

with these basic skills in place doing missions will be mostly easy, before I get troll monkeys let me say this is for your new guy who needs isk badly in the beginning you can train for gun ships later this is only to make it easy for new pilots to get that isk nothing more nothing less this is not a long term plan.

My setup for lvl 2 missions,
Rigs, rocket fuel rigs x 3
Hi, x 7 meta 4 rocket launchers
Mid, invulnerability mod, energy mod with cap 200, shield booster
Low x 2 ballistic controls.
it eats up frig rats real good,

The Skillbook for Ballistic Control Systems is the same as for Gyros, Heat Sinks and Mag-stabs: Weapons Upgrades. And I'd like to add that Minmatar-pilots can get by pretty well with the Talwar. It's freaking awesome, and in my opinion also cooler-looking than the Corax.

That's cause it was designed after a Russian tank :D

My Corax has a typhoon class name looks like a sub to me.

To be honest, the probe is probably the only good looking minnie ship, in my opinion.

I haven't flown the Corax yet, how does it compare at level 1/level 2 missions versus a Caracal fitted with rapid light missile launchers? (won't push the Navy Caracal, since it's pretty out of reach for most new mission pilots, but it's pretty awesome for grinding out missions you can't fit a BC/BS into)

Caracal is a nice hull, light missiles are ok so if you can fly one fine, but most 1's and 2's you'll blaze through them with a rocket fit Corax, my rocket skills are low, lvl 2, I didn't care for rockets because of the short range but with rigs and some skills and an afterburner you'll move so fast through missions and the cost is low as rockets are cheap to build and buy saving a new player isk while you build up savings for skill books, and many skill books can be bought with LP from missionP

Im pretty new and have started using the Thrasher from the Minmatar 'Advanced Combat Missions'.

Highs
I can run 6 280mm Howitzers or 7 Gallium 150mm cannons, with proton s ammo.
Mids
1NM Afterburner
1 Webifier
1 Shield Extender
Lows
1Targeting system
1 Power diagnostic system

I chew through anything currenty, my turret skills are quite high but with the artillary cannon I can get a optimal range of 29.6km! With the galliums I get 2,5km.

So Minmatar Noob turret guys this is an easy option to fit a decent early mission runner.

Thatsa nice, mozzarella pizzeria, NP, I'm just pointing to an out of the box get started deal sort of point and shoot without all the bells and whistles. Missiles do just that, guns are more involved and as the advance they move there.

Missiles are often wasted training thats better put into turret skills that will help with all races weapons (except caldari).

I wouldn't say missile skills are a waste, many missions are better off with missiles, many Guristas often jam so FoF are nice for that, blood raiders use tracking disruption as well as sansha so missiles are nice for that, im not saying go MISSILES only im saying use an easy button in the beginning to make isk as turrets are much more skill intensive and more time trying to kill NPC pirates is less time producing isk.
