My favourite from the in-game music, Theme of the Universe--Jon Hallur Haraldsson has some brilliant stuff in there.

The late Empyrean Age/Quantum Rise login screen theme--this will always "be" EVE for me.

And let's not forget the theme from the original "storyline" (read: not lame and 1337-mentality baiting) intro-movie! (<---Still makes my throat go tight, and my mind/imagination soar...)

Star Wars: the Old Republic may not be EVE. But I'll take the sound of dual blaster-pistols over "NURVV CLAOKING NAOW!!!11oneone!!" any day of the week.
